Interview

We interviewed Per-Ola Berggren who works at Novisen. Novisen is a restaurant school with students from Westerlundska. Per-Ola is a teacher at the Westerlundska restaurant school Novisen in Enköping.

How do you think it goes for all the restaurants in Enköping? I don’t think it goes so well for them.

Have you owned a restaurant? Yes I have.

Do you enjoy working on Novisen? Yes I do, it’s fun to see the students develop.

On which restaurant would you like to work on if you got to decide? I would like to work in a hotel restaurant in Spain.

Which was the first restaurant you worked on? The first restaurant I worked on was the Hotell Anglais in Stockholm.

Do you think there is too much of one kind of restaurants in Enköping? Yes, I think it too much pizzerias in little Enköping.

Which one is your favorite restaurant? Sjömagasinet in Göteborg is my favorite restaurant. They serve seafood and it’s a more luxury restaurant.

Which one is the restaurant you dislike most in Enköping? I don’t like the pizzeria Ricos so much.

Where would you start a restaurant in Enköping and which sort of restaurant would you start? I would like to start a summer restaurant nearby Mälaren like Bredsand (Bredsand is a beach in Enköping).

How do you think a good restaurant should be? It should be high quality ingredients and great and knowledgeable people who work there.
